I like fresh herbs, and I cannot lie. What I don’t like is when you buy a big bunch and it rots from neglect once a few tablespoons are procured for a recipe and the rest is forgotten.
But there’s always a solution. In this particular case, the solution is delicious recipes as well as a shift in mind-set to accompany them: Instead of plucking and sliding leaves off herb stems, try grabbing fistfuls to chop or whir into sauces, and instead of drying stems of rosemary and thyme, think of using them in ways you never really considered. Herbs and Their Stems Salad, pictured above. When you’ve got tender herbs, such as basil, cilantro, dill and parsley, their stems are as full of flavor as the leaves. Chop them up and let them absorb the lemony dressing in this salad, and you’ve got an excellent side for any rich dish.
