Recipes with Rachel: Make a broccoli salad that’s your own - The Edwardsville Intelligencer

When looking up broccoli salad recipes on Pinterest it can be so overwhelming. There are so many options to choose from and they all might be a little different. The things they all have in common are the textures — there’s sweet, there’s savory and the dressing that has vinegar in it. I like to look in my fridge and see what I can throw together that brings all those flavors together. Here’s a recipe that I threw together for broccoli salad including the items I had in my fridge, so there’s no need for an extra stop at the grocery store.

Prep time: 10 minutes | Cook time: 2 hours | Total time: 2 hours 15 minutes

Ingredients

•A head and a half of broccoli, chopped into bite-size pieces

•6 pieces of bacon, cooked and then chopped

•1/3 cup onion, diced (I didn’t have red so I used white)

•1/3 cup walnuts, chopped

• 1/2 cup dried cranberries

•1/3 cup yellow bell pepper, chopped

Mixture:

•3/4 cup Mayo

•2 tbs sugar

•2 tbs white vinegar

Recipe

In a small bowl, mix together the mayo, sugar and vinegar.

In a separate bowl, add the broccoli, cooked bacon, onion, walnuts, cranberries and yellow pepper.

Add the mixture in and stir it all up.

Chill for two to four hours and then serve.
