NORTHWOODS COOKS: Local honey adds flavor to recipes - Park Rapids Enterprise

Bolton Bees has hives in Sebeka, Menahga, Akeley and Hugo. Each of these locations has different blooming trees and flowers, which naturally cause the honeys to have unique flavors, colors, and textures. These are a few of their “go to” recipes that they use with different varieties of their honey.

Honey Toast

We eat this every day with a poached egg and coffee (also with honey!). All of our honey is raw, which means that it has thickened up. This makes it a perfect ingredient to spread on a warm slice of thick county bread.

Slice of 1-inch-thick country bread

Salted butter

Sea salt and ground cardamom (optional)

Granddad’s Bolton Bees Honey

Toast the bread and slather with butter. Spread honey on the bread, letting it mix in with the butter. Sprinkle sea salt and ground cardamom, if using. Serve warm.

Honey Tea

This is a classic drink that we love to sip on in the evenings. Especially when the season has completed its shift from summer to fall. We know that when we start making honey tea again that life has finally slowed down. We can take a deep breath – The harvest is done and the bees have been put away for the winter. This tea also helps heal a sore throat.

Tree Party Bolton Bees Honey

Lemon juice

Boil hot water and pour into a mug. Scoop 1 or 2 large spoonfuls of Tree Party Honey (from Akeley). Stir it up until blended. Add one or two squirts of lemon juice and stir. Sip slowly, tasting the warmth on a fall evening while reading a book.

Honey Pancakes

We love breakfast. If we get the opportunity to have a relaxing morning – sit back plan our day out while sipping our coffee (made with lots of honey and milk) – I usually whip up scrambled eggs, honey pancakes, and bacon.

Greek yogurt

Frank’s Bolton Bees honey

Butter

Use any pancake mix, adding water and a little bit of vanilla extract. Keep the batter a little thick. Heat up a pan, adding a little bit of vegetable oil. When oil is hot, add the pancake mix. Put a big dollop of greek yogurt on the pancake. Scoop a spoonful of Frank's honey and place in the middle of the yogurt. Serve warm, spreading the toppings around so that the yogurt and honey blend together on each bite.

If we get invited to a party and provide an appetizer we typically make this recipe.

Martini Bolton Bees Honey

Every time we make the plate it is a little bit different, but these are the main ingredients. Sometimes we add a pear slice or switch it up with prosciutto and a soft cheese. Just don’t forget to spread a layer of Martini Honey on the cracker first. It will hold the cheese down and add a robust sweet flavor paired with the contrast of the cheese.
