It's just a potato, sure, but there's a whole lot of potential to unlock in that humble spud.Whether it's simply boiled and served with lashings of butter, salt and fresh herbs, or roasted with rosemary and garlic, there are a whole load of delicious ways to cook with new potatoes.
How long to boil new potatoes
Lots of recipes that use new potatoes involve boiling them. It's a great way to cook new potatoes because it's quick and results in super fresh dishes and summery-style sides compared to roasting or frying.
When you're boiling new potatoes, especially if it's for a potato salad, you're going to need to start with cold water. This is important so that you're not cooking the outsides of the veg before the insides, resulting in mushy, unevenly-cooked potatoes. You want them to keep a little bite, especially if you're serving them cold with a dressing.
You also need to make sure to salt the water well so those pots soak up as much flavour as possible, especially if you're serving them simply. So, once you've got your potatoes in some nice, cold, salted water, bring the water up to a boil on a medium heat and boil for 10-15 minutes depending on the size of your potatoes. That's really it!
You'll be able to tell when the new potatoes are cooked when the tip of a knife goes into the potatoes will little to no resistance.
