
Don't tell the other months, but September might just be the most delicious.
September is undoubtedly my favorite month. The weather is still reminiscent of summer and all of summer's best produce is still in season, but it's subtly starting to feel a bit more like fall with milder temperatures, breezy nights, and, of course, pumpkin spice. Here are some amazing recipes to make this month.
Classic zucchini bread gets a lighter, zestier, and brighter take thanks to lemon juice and Greek yogurt. You can always leave off the citrus icing if it's too sweet for your breakfast taste.

This filling salad can be made with pretty much whatever vegetables you have on hand like cauliflower, fennel, pepper, broccoli, Brussels sprouts, and more. Just roast the veggies in the oven, toss with the beans, and drizzle with the tangy tomato salsa.
This curry is made with coconut milk and pumpkin or butternut squash, which makes the whole dish tastes delectably creamy even though it's totally vegan.

Savory pie is always a good idea. Start with pie dough (store bought is fine) and fill it with whatever vegetables are in season (like tomatoes and zucchini). Add beaten egg, cheese, and basil, and bake until the center is set and the crust is golden brown.
Think: Eggplant Parmesan but so much simpler to make. Hollowed out eggplant boats are stuffed with a mixture of onion, sausage, olive oil, and herbs, covered with shredded cheese, and baked until melty.

If you're intent on holding onto summer for as long as possible, this pasta is a great way to do it. I love making it with a tubular pasta like rigatoni or penne to sop up all the cheesy, lemony, oily sauce, but any pasta shape will do.

Turn the boneless, skinless chicken breasts sitting in your fridge into a seriously satisfying weeknight meal. Try serving it over mashed potatoes, couscous, or orzo to make the most of the creamy lemon sauce.
